Join us for this hands-on workshop where you'll learn how to keep a steady supply of fresh greens through the seasons—without starting from scratch each time. Whether you're a total beginner or a seasoned gardener, you'll walk away with the know-how to plan, plant, and maintain a thriving, climate-smart salad garden. We’ll cover succession planting, soil health, season extension, and common local challenges, all while getting our hands dirty in a real working garden.

Beth Covert
Before trading her artist career for a pair of garden gloves, Beth Covert did her homework on desert gardening. After moving from Ohio, she managed the garden department at a local retailer—where she quickly realized their plant selections weren’t cut out for Central Oregon’s harsh conditions. That’s when she founded High & Dry Gardenworks, her own living lab for growing resilient, climate-appropriate plants. Beth has designed thriving food gardens in this tough climate and is excited to share what she’s learned!

How should I dress?
Dress for the weather and outdoor activities. Layers, sturdy shoes, and a hat are your best bet!
What should I bring?
A notebook, pen, gardening gloves (optional), a dish for the potluck, and your own plate and eating utensils.
Can I bring my kids?
Absolutely! Children are welcome if accompanied by an adult.
Will there be food?
Yes! Bring a dish to share for the potluck. We’ll provide the main protein.
Do I need to prepare anything ahead of time?
If you have specific salad greens you’d love to grow, bring a list!
