Beth Covert is a self-described food alchemist with a serious knack for turning backyard abundance into magic. After trading her art career in Ohio for the high desert winds of Central Oregon, Beth started High & Dry Garden Works to grow and propagate resilient plants. She’s known for bold garden experiments, zero-waste cooking, and creative preserves—like dehydrated french fries and those vinegars you’re about to learn to make. Ask questions, take notes, and expect Beth to blow your mind a little.
